Wallis Mango Vinegar Syrup is a sweet & sour dressing which is sublime on seafood - particularly prawns and crays. It's beautiful on strawberries, and also stops fruit in general from going brown in fruit salads. Leonie Wallis of Wallis Mangoes also uses this on fish & chips.
The Wallis family's chemical free mango plantation has been going since 1983 and isn't generally open to the public. This syrup gives a taste of what we're missing.
The sweetest mangoes need to be sun-ripened, and come from the tallest trees, so we figure the Wallis Mango Plantation must offer lots of sun time and tall trees to provide the sweetness factor here.
